ISO: ISO changes the sensitivity of the cameras sensors. This allows for shooting in low light conditions. This is similar to how our eyes open our pupils when we are in a dark room, or at night. When the ISO is cranked up it can create noise and weird color spots. This is why other settings are used to also compensate for high or low light. The higher the ISO value the more sensitive the sensors are and the more light is picked up.

Shutter speed controls the length of time that the shutter is open. The faster the shutter speed the less light is let into the lense. This can be used to help in high light conditions. You can use a slower shutter speed to add more light but this can be risky as it can create unwanted blur and motion. If you are careful as above you can use this to make wanted and intentional blur.

Aperture: Aperture effects the depth of the focus. The bigger the aperture the larger the depth of field is.This is created by letting light go through more of the lense increasing the light that is let in, and the amount of curve and therefore refraction. This can make for a kind of fisheye view. If you want a very clean photo have a high aperture, and a very clean lense If you want to take a photo with a soft backround you will probably want to have a smaller aperture.
